Kids require a lot of fundamental nutrients to grow and to be healthy. They are very active and seldom sit or rest in one place. It is quite a challenge to make kids eat all their greens regularly. We often give in to their tantrums and allow them to eat unhealthy food which leads to various issues as a consequence.

Kids need not hate their everyday mealtime instead it can be made very enjoyable for them by simply adding a twist to the old recipes.

BREAKFAST

EGG ROLLS

INGREDIENTS

  • 1 Egg
  • 1 cup whole wheat flour
  • ¼ cup of water
  • 2 tsp oil
  • 1 tsp pepper
  • Salt to taste
  • ¼ cup coriander
  • 2 tsp ketchup
  • ¼ cup capsicum

PROCEDURE

First, crack the egg and mix it with some salt in a cup and add the capsicum to it. Pour the mixture onto a pan that has been heated on low flame. Make soft scrambles and remember not to cook the egg for more than 3 minutes. Add some pepper and remove the egg from the pan. Now knead the wheat flour into a soft dough by mixing in the water and oil. Roll out some dough into a thin sheet and transfer it onto the pan. Let it cook on both sides for a minimum of two minutes. Now fill the chapati with the egg and add some ketchup and coriander leaves on top. Roll it over and seal the roll with a piece of clove and your easy and delicious egg roll is ready to serve.

LUNCH

SPINACH AND CORN PULAO

INGREDIENTS

  • 1 cup of spinach (any kind)
  • 1 cup basmati rice
  • Ghee – 2 Tsp
  • Oil – 2 Tsp
  • Whole Spices – Cinnamon, Cardamon, Cloves, Pepper Corns, Star
  • Anise, Cumin & Bay Leaves
  • Onion – 1 Nos Finely Chopped
  • Green Chilli – 2 Nos
  • Ginger Garlic Paste – 1/2 Tsp
  • Turmeric Powder – 1/4 Tsp
  • Cumin Powder – 1 Tsp
  • Garam Masala Powder – 1 Tsp
  • Salt – 1 Tsp
  • Water – 2 cups
  • 1 cup of Corn

PROCEDURE

Wash, drain, and half cook the basmati rice. Add the ghee and oil to a cooker and toss all the whole spices into the cooker and keep stirring for 30 seconds. Add the onion and fry for a minute till it turns transparent and then add the chillis and keep frying for another minute. Next, add the ginger-garlic paste and stir well. Put in Turmeric Powder, Cumin Powder, and Garam Masala Powder and let it cook for one minute or until the raw smell is gone. Then put in the spinach and corn into the cooker and stir for 2 minutes. Lastly, add in the cooked basmati rice and gently stir to mix everything well and close the cooker and let it cook for 5 minutes, and finally, the dish is ready to be served hot.

Nutrition Tips – You can use brown rice instead of basmati rice as a healthy alternative.

DINNER

DOSA PIZZA

INGREDIENTS

  • Dosa batter
  • Capsicum ¼ cup
  • Corn ¼ cup
  • Tomato ½ cup
  • Onion ¼ cup
  • Paneer ¼ cup
  • Cashew ¼ cup
  • Garlic 1 clove
  • Oil 1 tsp
  • Pepper 1 tsp
  • Oregano ¼ tsp
  • Paprika ¼ tsp

PROCEDURE

Take a mixer jar to prepare the homemade tomato puree. Put in ¼ cup of chopped and roasted tomato and add in ¼ cup of cashew, one clove of garlic, one tsp of oil, and one tsp of pepper. Grind everything until it forms a thin paste that is not too runny but also not too thick. Take a dosa tawa and pour the dosa batter and spread it slightly thick to make a dosa. Take the tomato puree and spread it over the dosa and then add all the vegetables (onion, capsicum, corn, paneer) on top. You can grate some cheese over it if you like. Drizzle some more tomato puree over the vegetables and sprinkle oregano and paprika. Take a lid that will cover the dosa like that of an idli cooker and cover the dosa and let it cook for 30 seconds. Take the dosa off the tawa and enjoy it hot.

DESSERT

BANANA PUDDING

INGREDIENTS

  • 2 Ripe bananas
  • 1 cup of jaggery
  • 1 cup milk
  • 3 eggs
  • ½ tsp green cardamom powder
  • 1 slice bread

PROCEDURE

Take an appropriate vessel for your pudding and add ½ cup jaggery in it and add to it 2 tsp of water and let the jaggery caramelize. After that let the caramel spread evenly on the bottom of the vessel and let it sit for 2-3 minutes. Then, take a mixer jar and add 2 ripe bananas, I cup milk, 3 eggs, ½ cup jaggery, ½ tsp cardamom powder, and 1 slice bread and blend it all. Pour this mixture into the vessel with the caramelized jaggery. Take a larger vessel and pour 1 cup of water and place the vessel with the pudding in it and cover it with a lid. Let it steam for 20-25 minutes. After that, you can wait for it to cool and remove the pudding and transfer it to a serving plate and enjoy it with your kids.
